Swedish Pancakes - Plattar

This recipe is from Disney's Family Cookbook. We have been making these since Dancer was a wee babe. They are simple and crepe like. One batch is never enough for us so we always double it.


Swedish Pancakes


1 1/2 cup flour
1 tbsp. sugar
1/2 tsp. salt
3 cups milk
2 eggs
butter for the pan
Sift the flour, sugar and salt in a large mixing bowl. Add the milk, a little at a time, whisking well to keep the mixture from becoming lumpy. Beat in the eggs, one at a time.
Over medium heat, brush a non stick frying pan with a small amount of melted butter. The batter will be very, very thin. Swirl in about 1/3 cup of the batter and cook for about one minute or until edges are dry and the middle bubbles. Flip and cook the other side until golden brown.
We love these just plain with brown sugar but other toppings could be jam, bacon, cheese, applesauce, berries and whipped cream.
