Grandma Pat gave us The Taste of Home Baking Book for Christmas. With a just having time to do a quick glace through it, we could see there was going to be lots of recipes we were going to want to try. Dancer made a pan of these Peanut Butter Bars by Patricia Staudt. The oatmeal in these help them not to be a dense, dry peanut butter bar.
Peanut Butter Bars
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- 1/2 cup oatmeal
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
ICING:- 1/2 cup confectioners' sugar
- 2 tablespoons creamy peanut butter
- 2 tablespoons milk
Cream butter, sugars and peanut butter until light and fluffy. Combine dry ingredients and add gradually into creamed mixture. Spread in 9X13 pan and sprinkle with chocolate chips.
Bake at 350° for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes.
Combine icing ingredients; drizzle over the top.
Hope these freeze well because we popped them in the freezer so we wouldn't be tempted to eat them all.
So...my daughter would like an update about how they did in the freezer. :o)

They froze beautifully, tasting just as good as they did when we took them out of the oven, but of course much colder.;) Ditto for the almond cookies, in fact they may have tasted even more almondy, almondish, almondized or whatever the word would be for more flavorful.

ReplyDeleteI just made peanut butter bars tonight for my family! I will have to try your recipe as they are similar yet different. We do not drizzle ours with anything...hmm, will have to do that! Thanks for sharing!
