Now you need a license to hunt for pizza? Back in college we just sniffed around dorm room doors until we found some. We saw this sign in town today when we went into vote. On Saturday we all worked hard in the yard and garden all day. We didn't get in until after dark and I didn't get my pizza hunting license yet, so we made dinner from stuff in the cupboard. This a very tasty, inexpensive amd hearty dinner. There was enough left over for lunch Sunday after church.
HOPPIN' JOHN
Large tomato--diced
Large bell pepper--diced
Medium onion--chopped
3 cloves garlic--minced
2 can blackeyed peas, or black beans or one of each
2 cups chopped ham (I used hotdogs instead)
Saute onions and garlic 'til soft and just changing color. Begin preparing rice as packaging directs. Add pepper and saute 'til soft. Add remaining ingredients and cook until warmed through. Serve hot over rice and garnish with salsa and sour cream if desired. If tomatoes and peppers are out of season substitute a can of RoTel onion and peppers (will be spicier).
