Grilled Portobello Mushrooms


Grilled portobello mushrooms are a delicious treat any time of the year.  These are a substantial, dense food that can take the high heat of a grill.  I often cook these whole, they can even by eaten like a burger.  If cooking whole, pour olive oil onto the underside of the mushroom.  The gills soak up a lot of oil and the oil leaks out and fires up on the grill so don't pour it in 'til they are full.  Put a good tablespoon of minced garlic onto each underside and poke into the gills with a fork, let sit for an hour.

In the following recipe, I am using a grill pan to reduce flare up and save room as I am grilling some steaks too.

 The mushrooms are cut into 1/2 inch wide strips.  Toss with olive oil and minced garlic.  Let the mixture sit for an hour or use right away.


Grill over moderate to high heat, stir often.  Sample every couple minutes to see when the are tender, it may take 10-20 minutes.
