Homemade Potato Chips

If these weren't so time consuming we wouldn't buy store bought chips again. 
 
To slice the potatoes super thin use the food processor and barely press on the potato. 
 

Drop the slices in hot, hot oil and fry until they are brownish.  We don't have a deep fryer so we fried them in a pan on the stove.  They tended to stick unless they were in a single layer, not over lapping any more than shown here, and if they were dropped in one at a time. 


Drain them on a cooling rack, then on paper towels and give them a little sprinkle of salt.  Then hope that your family hasn't eaten them all while you were frying them and you have a few left for supper.
