Potato Corn Chowder

Temperatures below zero for several days has my stomach thinking of hot soups and chowders.  I made this for supper last night and the kids loved it so much they asked for an encore for supper tonight.  Since I tend to just dump stuff together, Spark requested that I also write it down so we can have it again.  This is super simple, I made it in a large frying pan.

In a 2-3 tablespoons of olive oil, sauté an onion and couple of stalks of celery.  Cube 6-7 potatoes depending on how big they are.  Add the potatoes to the onion, some chicken stock (enough to boil the potatoes in) and a pinch of cayenne pepper (unless you really like spicy food then increase to your liking).  When potatoes are done, mash about half of them and return to the pan.  Add a bag of sweet corn and heat through.  Before eating, add some shredded cheese and salt and pepper to taste.

OOooooo, yummy AND easy! My kind of cook'n! We made Cheeseburger soup and Turkey soup over the long, cold weekend and the Cheeseburger soup is almost gone. May just have to try your soup to make sure it's good :)
