Really, really low fat Pumpkin Chocolate cake


Just two ingredients - a 15 oz. can of pumpkin and a cake mix (doesn't need to be chocolate, that is just what we use).


Mix the pumpkin and cake mix together.  Get out the hand mixer or your muscles because this is the hardest part to get these two mixed together.  The batter is very think.


Put in greased 8X8 pan and bake at 350 degrees for 45-50 minutes.

I love making those! I always add a 1/2 cup of water to make it less thick.. since my hand mixer isn't the highest caliber! :-) Also, I've added 1/4 cup of egg beaters and it doesn't really change things much, except added protein. I love using spice cake mix too.. yum! Thanks for reminding me.. a friend just gave me several cans of pumpkin so this will be a perfect dessert for this week!

I wondered if adding water would make a difference but since it was our first time trying this we decided to do it "by the book." Next time I will add the water in. I also have to say that I was pleasantly surprised how good it was, the kids actually really liked it.
