Banana Pancakes

We always make our own pancakes.  If you figure you have to measure the oil, egg, milk and the pancake mix to make them out of a box, it really isn't much more work than making your own.  The homemade ones also taste a whole lot better.

Here is our tried and true pancake recipe ~

1 egg
1 cup flour
3/4 cup milk
1 Tbsp. sugar
2 Tbsp. vegetable oil
3 tsp. baking powder
1/2 tsp. salt

Beat egg with hand mixer until fluffy and beat in remaining ingredients just until smooth.  For thinner pancakes add more milk.

To make them into banana pancakes, which your family will be raving about how much they loved them for days, omit the oil and add in a few ripe, mashed bananas.  If you have one banana add one, if you have three add three, there is no hard and fast rule here.
