Chocolate Potato Cake with Cream Cheese Frosting Recipe

Dancer is making a potato cookbook for one of her fair projects so the next few days or weeks, however long it takes to make all these potato recipes, our diet will consist of....wait for it.....potatoes!  We will post the really good ones on here.  This is a really, really good one.


Chocolate Potato Cake

3/4 cup butter
1 1/2 cup sugar
4 eggs, separated
1 cup mashed potatoes
1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup cocoa powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 cup milk
1 tsp. vanilla
1 cup nuts, chopped
Cream cheese frosting

Cream butter and one cup sugar.  Add egg yolks and beat well.  Add potato; mix thoroughly.  Add sifted dry ingredients alternately with milk.  beating until smooth.  Add vanilla and nuts.  Beat egg whites until stiff.  Gradually add remaining sugar to egg whites, beating until very stiff.  Fold into cake mixture.  Pour in greased 9X13.  Bake 45 minutes at 350 degrees.  Cool and frost.

Cream Cheese Frosting

1 package 8 oz. cream cheese
1 tbsp. milk
1 tsp. vanilla
4 cups powdered sugar

Beat cream cheese, milk and vanilla until smooth.  Beat in powdered sugar one cup at a time until smooth and of spreading consistency.
