kielbasa and Potatoes

Dad declared this Dancer's best potato recipe yet!

Kielbasa and Potatoes

8 slices thick sliced bacon, diced
2 large onions, chopped
6 large potatoes, boiled and chopped
1 Kielbasa sausage
2 bell peppers for garnish - these could also be cooked into the dish and sauteed with the onion
salt and pepper to taste

Fry bacon until crisp, remove from pan and dice.  In bacon pan add onion to drippings and saute until golden brown.  Add potatoes and stir over low heat for about 15 minutes.  At the same time boil the Kielbasa for about 15 minutes.  Cut Kielbasa into 1/2 inch slices.  Brown a few minutes in a skillet.  Add all ingredients together over low heat for about 10 minutes.  Plate and garnish with peppers.  Season with salt and pepper.
